I’m Stacey, a nutrition expert and Registered Dietitian Nutritionist
My curiosity for nutrition began in 2012.
Seemingly out-of-the-blue in my 3rd year of college, I began experiencing debilitating abdominal cramps. Later that week, I started budgeting an additional 2 hours before my morning lectures to allow enough time to sprint to the bathroom on my way to class. 2 months and 30 lost pounds later, a colonoscopy at the ripe age of 21 confirmed my diagnosis: moderate-to-severe ulcerative colitis. My first question for my doctor after receiving my diagnosis was, “What can I eat?” and so began my enthusiasm for nutrition to help manage my symptoms and ease the difficult side-effects of medications. Through my own experience with ulcerative colitis and years of working with Registered Dietitian Nutritionists, I have learned how to navigate the misinformation that surrounds nutrition and replace the foods that exacerbated my symptoms with other nutritious foods so I wouldn’t miss out on the good life, and now I help others do the same through my private online practice, Gutsy Nutrition. Managing a digestive disease can be challenging, exhausting, alienating…and also rewarding. I want people who find themselves in similar life circumstances to know that a fun life with good food is still possible, and this road doesn’t have to be a lonely one when you have a dietitian in your corner.
