Is pretty simple: people with IBD deserve better, and that starts with accessible nutrition knowledge and competent, compassionate clinicians. By providing you with the latest and greatest in IBD nutrition science, I aim to leave you feeling confident enough to apply the skills that are so greatly needed to improve the care of our patients.

IBD TRAINING TOPICS & LESSON PLANS

  • This topic addresses common nutrition myths, debunks them, and provides strategies for implementing research-based nutrition recommendations in a way that’s actually useful.

  • This topic covers medical diet therapies, such as the Specific Carbohydrate Diet (SCD), Crohn’s disease Exclusion Diet (CDED), and the Mediterranean Diet (MD) eating pattern. Together, we explore the latest research for diet therapy as well as resources for finding an approach that works for you.

  • Which well-researched medical diet options are available for IBD? Are food sensitivities testing worth my time and money? How can I be more participative in asking for and understanding my nutrition-related labs from my GI provider?

  • What if anemia isn’t part of the problem? What are some other nutritional strategies to manage fatigue in IBD within multidisciplinary GI care teams?

  • Is Intuitive Eating an appropriate diet approach in pediatric IBD? This topic answers this question and explores challenges and barriers to Intuitive Eating principles and when/how to address them in the Pediatric IBD setting.

  • What is a dietitian’s role in the inpatient setting, or in an outpatient setting when presented with a patient with IBD? How can you advocate best for your patients based on your work location? What sort of care coordination needs to happen?

  • Two sides of the same coin: How healthcare inaccessibility affects outcomes from both a patient and a healthcare professional perspective.

Stacey Collins, MA, RDN/LD

Before I was ever a dietitian, I was a patient first.

Diagnosed with moderate-to-severe ulcerative colitis in 2012, I never received an answer to the question, “So what can I eat?”

I felt like my concerns were dismissed.

I know what it’s like to fall through the cracks of a broken healthcare system, so here’s a safe place to land, wherever you are on your journey with Crohn’s or ulcerative colitis, you’re welcome here!

Being a patient means that I speak the same first language as other patients, but we are all unique, and no person’s IBD nutrition or medication regimen looks identical to the next. This means you can expect me to believe your experience, seek understanding, and help move you into a place of action for your nutrition needs safely.
